Is Quickbooks Pro a good product to handle a Consignment business, specifically in handling all the items which are not inventory but need to be somehow tracked until the sale does occur.

Thanks

As your company does not own consigned goods, they are not inventory. You would probably need to track them in Excel or something like that. The program is not designed to do that type of tracking.

Consignment Inventory

You could use inventory to track your consignment items, everything would just have a zero cost and when you sell an item, you could record your commission earned and your liability due to the owner of the consigned item.
