It's all in the preparation, of course. You either end up with a delicious delicacy, or you end up with greasy, fried rubber bands. I've had both in the past week, as it turns out.
I love a good, roasted duck, too. Had some at the wild game dinner last fall, that was to die for. Had to leave room for the venison meatballs and spaghetti, though. That's the problem with being an animal lover, though...they're ALL so delicious!
We need to come up with something else.
