Hello Wei Lin!
The excess foot movement was to show the difference between a more static classical martial art and the more relaxed Jeet Kune Do, and to break the rythm and timing, thus confusing his more "traditional" opponent! Remember that "Way of The Dragon" (known in the United States as "Return of The Dragon") was Bruce Lee's vehicle to introduce his Jeet Kune Do to the world of motion pictures! The whole production was HIS, start to finish! he had full control over everything having to do with the entire movie! Also, remember that we don't move around excessively! Only what is needed to accomplish the task at hand!

"What is Jeet Kune Do (JKD)? Chinese martial art, definitely! It is a kind of Chinese martial art that does away with the distinction of branches, an art that rejects formality, an art that is liberated from tradition." __Bruce Lee
