I hope that all is well with you! Here are the answers to your questions.
1) For the left hook, I assume I step in and cover with my right hand, the opposite of what we normally do.
Smother with your right side, or palm stop to the bicep.
2)Against a left lead straight do you recommend a shoulder roll or catch?
Outside slip (to your right) and wu sao (backhand parry). You may also execute the stop catch if you like (since you are wearing gloves). Shoulder roll is also possible, but maybe a little slow considering the range of their punch. Try it and see how it feels!
3)For their right cross I assume is is a wong pak with the rear hand.
Woang pak with your rear hand or shoulder roll.
