You have a few choices here!
(1) Use footwork (such as side-stepping, angling, re-zoning and curve stepping) to evade the rush, then attack as the opponent tries to re-adjust his position!
(2) This would be MY choice: Cut into his oncoming rush right as he starts! It may sound difficult, but once you are familiar with this type of opponent, you can learn to intercept and destroy right as they start their attack! In other words, never give them the chance to build momentum!
(3) To me, NOT AN OPTION ... but you could also play parry, evade and block until they wear themselves down, then counter-attack FAST, HARD and MERCILESSLY!
