Hi Rob,
You said that you wanted a deeper knowledge of Wing Chun. I'm afraid to gain deeper knowledge, you have to have one on one regular work with a qualified instructor. Since the focus of wing chun is not technique but rather principles and sensitivity you really need hands on. You can't pick up the fine points unless you can feel what is going on. However some of the basic concepts can be better understood through video or books.
I am going to go out on a limb here. I have reviewed thousands of videos and You Tube clips over the years and most are pure garbage. But, I do believe you can pick up some very basic but effective concepts from a series of clips on You Tube that are pretty good. They are a group of seminar clips by Emin Boztepe. You simply search for Wing Chun Emin Boztepe. They are numbered 1-7. The clips are very basic but do a pretty good job of explaining center line, triangles, foot work and more importantly the effectiveness of chung choi. The grappling may be a little shaky in the last clips so I am a little undecided on it. Over all they are good at explaining these aspects of the art. As I said the deeper concepts explored through chi sao require a very good instructor. And yes I am aware that Boztepe is very polarizing. He is loved and hated, but still the clips aren't bad.
Hope this helps.
Jack
