SUMMER RECIPES

Anyone out there have at least one good recipe that they rely on for these hot summer months?

Ok, I'll start.

My dad used to make this and it's great to serve up as a meal with some potato salad and cole slaw or as a salad or to just keep in the fridge to make sandwiches:

SPAM PLATE
Line a tray or plate with lettuce (iceberg or your fave)
Put (uncooked) spam slices on top of the lettuce
Layer slices of tomato, onion, hard boiled egg on top
Top w/pickle slices
Serve w/mayo or salad dressing

Donna .. Dad recipes ...
8 tea bags in a pot of tea .
My Dad liked his Tea Black .

I would use the very same tea pot as my Dad and use only two tea bags .


I came across a secret recipe , I don't mind sharing . YUMMY COOKIES

Miss - Kristi's Sugar Cookies

1 1/2 cups powdered sugar
1 cup unsalted butter , softened
1 teaspoon vanilla extract {extra to Taste }
1 teaspoon almond extract (extra to taste)
1 egg
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Mix powdered sugar , butter , vanilla , almond extract and egg

Stir in remaining ingredients. Cover and refrigerate ( it says for 2 hrs. but I normally only do about 15 - 20 minutes

Heat oven to 375 Grease cooie sheet lightly. Roll out dough , cut into desired shapes . Bake Cookies for 12 minutes or until bottoms are ligt brown . About 65 calories per cookie

if using self rising flour ,omit baking soda and cream of tartar

Miss Krist's Sugar Cookie Icing

2 cups icing sugar
1 1/2 tbs softned butter
1/2 teaspoon vanilla extract (extra to taste )
1/2 teaspoon almond extract (optional )
1/4 tsp salt
3-4 table spoons milk


* Add more icing or milk for desired thickness / glaze

Onion Chip Dip

Package of Onion Soup Mix
1 cup sour cream
1 cup mayonaise or miracle whip



*Add onion soup mix as desired to miracle whip and sour cream.

Sorry I did not make it back on yesterday. My life is really busy right
now!! And I can not seem to catch a second to myself.
I love to fix bruschetta in the summer time with fresh tomatoes.

Bruschetta
Read Review3 Tbsp. minced garlic
2 Tbsp. extra virgin olive oil
4 to 5 fresh, ripe tomatoes
1 bunch fresh basil
1/2 cups olive oil
1/4 cups balsamic vinegar
1/4 to 1/2 cups shredded Parmesan cheese
Fresh ground pepper
Crusty Italian bread

Sauté garlic in olive oil for about 2 minutes on medium heat. Place in 2-qt. serving bowl to cool. Dice tomatoes and add to bowl. Remove and discard stems from basil. Place leaves in a small food processor with a little extra virgin olive oil and process until finely chopped; add to bowl. Gently mix in olive oil, balsamic vinegar, shredded hard Parmesan and ground pepper to taste. Serve on slices of crusty Italian bread.


And my all time favorite

Cherry tomatoes and Corn Salad
1/4 cup minced fresh basil
3 tablespoons olive oil
2 teaspoons lime juice
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups frozen corn, thawed
2 cups cherry tomatoes, halved
1 cup chopped seeded peeled cucumber


DIRECTIONS
In a jar with a tight-fitting lid, combine the basil, oil, lime juice, sugar, salt and pepper; shake well. In a large bowl, combine the corn, tomatoes and cucumber. Drizzle with dressing and toss to coat. Refrigerate until serving.
(and you can use 8 nice size fresh ears of cook corn instead of frozen)

I hope you enjoy trying these.

Bruschetta-love it! I'm going to give that one a try soon's I can get all the ingredients. I tried it the first time at my oldest daughter's house for lunch and it was really delicious.

I have been making onion dip just like your recipe but never heard of adding mayo. I'll have to give it a try next time I make it.

LOL, my dad did the same-used 8 tea bags and always made his tea in the same pot. Now, with the ice tea makers, I would just throw in 4 tea bags turn it on and let it go. Mine broke recently, so I'm back to making it in a pot and I usually use 4 tea bags and yes, I use the same pot for making my ice tea in-mainly cuz I measure it just right in that pot.

Cookies sound really good. This Christmas I had a really good recipe for butter cookies and baked them every other day and they went so fast, I hardly got to eat any myself.

I'm definitely going to try your sugar cookie recipe. Nothing like cookies and hot tea or milk.

Let me tell you a secret , when I attempt to help with cleaning dishes {rare for me } Hubby's job now . I can't stand for very long , neither can he .

My attempt of helping with dishes , I'll put the silverware away . I literally throw the silverware in the drawer , and yes a silverware container sits in this kitchen drawer .

I donot stand there and place forks or spoons or knifes in their proper slots . No sireee
this irks hubby to no end .

What can I say ? I'm sure it would irk you too .
Please forgive me , Pain and I and Time Consuming donot get along.

I am the same way should I attempt to help with cooking .
I was once a whiz in the kitchen , I'm now a disaster .
Worked in many industrial kitchens in my life time as a cook and cooks helper
Today ,I literally boil water dry ,infact need to throw out the pot .

easy simple recipes with fewer ingredients for this kid .

A thought comes to mind , I'll pass on the long recipes to spouse .

=^..^= Donna , the dip was originally used for vegetable dip , I use it as a chip dip .

vegetabes : brochili carrots green onions cauliflower celery mushrooms ,etc.

I use same (except like I said never tried w/mayo or miracle whip) ingregients for chips-pkg of the onion soup mix mixed in w/sour cream. But, did you know they have a dip just like lipton onion soup mix but it's for salads or vegetable-same recipe-use pkg of that w/sour cream.

Also, I just remembered one other recipe which takes less than 5 minutes to prepare. Can be served w/your favorites crackers:

Shrimp Dip

-Place 1 block Philadelphia Cream Cheese on a decorative plate
-Empty bag of shrimp (precookd) on top of cream cheese
-Pour on your favorite bbq sauce
-garnish w/parsley and voila-it's done.

*Can serve w/your favorite crackers or veggies (celery, carrots, broccoli, etc.)
