... I'd give them a (ridiculously high) CON value, but only body-mangling hits may make damage. So no amount of shots or piercing wounds may make any real damage.
Once the body is chopped apart there is the question of whether the parts can get together again. If not I'd let them mercifully stop twitching after a decade or two...
