Took the cougar for a ride yesterdy-NOT HAPPY

As posted before,i installed the Summit 380425 radiator along with a new 180 degree thermostate, new upper/lower hoses, I fushed the engine about 10 times and used the Prestone coolant flush,and put 2 bottles of Purple Ice in cooling system with strait water no antifreeze. I didnt want to cheat so I got the engine to operating temp before I drove it. Everything is ok but noticed the temp was staying at a steady 190 degrees through town. Then I got on highway and hammered on it pretty hard to about 100mph-everythings ok to this point. Then I come to a stop light & had to sit awile. Temp started to climb closer to 200. So I got home & let it idle awile and it got to 210 so I shut'er down. My question is, do you think running antifreeze will help? Also, my stepdad said I should run a 195 thermostate cause it will cycle better. I did a test in the past and the 160 thermo would cycle to fast and over heat and the 195 had same problem but the 180 would do the best. Now that was with the original 3core radiator-is it different with an aluminum radiator? By the way it was about 102 degrees of Texas heat here yesterday! Thanks for help,Matt
