Hmmm, let's see... I have no idea what any of his moves are called, for a start.
(Has bright idea to check GameFaqs - it has movelists, but no move descriptions, which I can help with...)

"Sinful" is a special throw where he grabs you, then hits you so fast with his other arm, it blurs. Just 3 ~ 4 hits.

In "Magnus", Elias gestures upwards and a small pillar of fire rises from the ground next to his feet. (Possibly why you might decsribe him as being a bit Seth-like.) Absolutely sucks as anti-air, because the height is nowhere near enough. But that's okay, because of...
> Holy Flare : QCF+Punch
...the "Holy Flare". Elias raises a hand and creates a circle of fire around his upper body, and at this point his upper section is invulnerable. If you try attacking, you get hit by the fire circle instead. Elias then throws the circle of fire, and because of its size and how damn tall Elias is compared to everyone else, it is futile to try jumping over it. it's easy enough to roll through or dodge instead, though.
> Hell or Heaven : HCF+Kick
Now this is just plain nasty. Elias dashes forwards a short distance, and if he connects then he grabs you and sucks a little bit of life out of you and into himself, healing a little bit of life. The kicker: There's a red section of your lifebar indicating what the limit is when you're tagged out and recovering life (rather like Darkstalkers 3), but "Hell or Heaven" cheerfully ignores this limit and will go over it.

I can't remember this one all that well, save that it's an 'autocombo' move much like Kim Kaphwan's Hou'oukyaku, or Ryo's Ryuuko Ranbu. Except Elias doesn't leap across the screen but just runs, so I suppose it's a bit more like Kim Jae Hoon's version of the Hou'oukyaku.
Anyway, to finish off the autocombo, Elias does some sort of really beefed up "Heall or Heaven".
Elias also has a team super with Alice, where they bounce the opponent around with Magnuses and Alice's version of the Magnus.
Poses
Stance: Looked really generic, so I can't remember it very well. Look at Ryu's stance, with the lead hand low and the rear hand high - I seem to remember Elias' hands in the same position, and he shifts from side to side instead of bouncing up and down. I guess I can remember reasonably well after all.
Winning stances: The only one I remember is where he turns his back to the screen. Elias wears some heavily modified priestly robes that leavs his upper back bare - he just so happens to have a tattoo on his back. (Sound familiar?) It's of the Holy Cross.
Quotes: The arcade is too damn loud to hear anything he says.
Sayings: Are all in really bad English that looks like it was translated first from Japanese to Spanish and then to English by a Slovenian. No joke. One of the sayings against Elias is something awful like "I hope you make prayer to bad place."
That said, his general demeanour seems to be "I will be devout and do good in this world, but I will also be high and mighty when dealing with people I am about to beat up." Par for the course, really.
