There are two character handicaps here. First off, Juggernaut is in his current incarnation in the comics: anti-hero who is far more vunerable (or stoppable) than the old days. Also, Vanilla Ice has yet to become a vampire (partially because that didn't happen until a minute or so before blowing Abdul to kingdom come at Dio's mansion). Hence, he won't have the crazy vampire durability like in the manga where he refused to stay down despite all the crazy shit Polnareff did to him.
That wouldn't be too much of a problem for Dio, whose body is all unstable anyway.
So far there are two matches taken: Match 5, the Geese/Heihachi vs. Sean/Shingo vs. Johnny/Jenet match (AoD) and Match 8, the Necro/K9999 vs. Ken/Robert vs. Dee Jay/Duck King match (black dub). So if there are any of the other six you want, don't hesitate to ask.
