Response to Tradition and all that. Yes, but how about using a filter?
The more I read from you, the more interesting your life becomes...mostly early 1800 Ports?!?
One of the possible side-effects of "filtering" to remove sediment is that it risks also removing much of the much smaller particulate that make up "mouthfeel." Obviously, it depends on the fineness of the filter used, but until I am convinced such is not a problem, I would probably stay away from filters. To me, "mouthfeel" is a very important part of the wine experience.
BTW - when you referred to HK Supremo, were you referring to Mr. Tung?
