Consider blanching your vegetables...

Response to You will probably say "duh" at this question on raw veggies...

 

...for use in salads. That is, boiling them for 60 seconds or so, before putting them in an ice bath. It is akin to coddling eggs. It may help deal with any microbal issues, and it softens them a little bit without turning them to mush.

Eat fruit raw, cook your vegetables lightly. JMO.
