. . .just since the new year, I've had lamb's tongue, duck liver, goose liver, sweetbreads (twice, the first time not so hot, the second time unbelievably wonderful) mondongo several times, morcillas (usually late at night after getting home from teaching, with a very cold Kirin Ichi-ban. . .mmmmmmmm) and pork with vegetables in liver paste. Oh, and steak and kidney pie. A significant portion of my non-fish animal protein intake is actually organ meats- if anyone you know is going to die of Creutzfeld-Jakob disease (human mad cow disease) it's gonna be me.
