... and freshly grated wasabi? Not in the sushi places I've been, the rice has always been cold and unfluffy, the wasabi always an industrial paste and the ginger is usually pickeled. I have to admit that I didn't notice any huge difference between the sushi I had in Tokyo or that I had in Europe or the USA, I always thought it was pretty good ... I still have lots to learn and the warm rice angel definitely needs to be explored!
