I've eaten at Nobu in New York, I can't compare it to the original, nor can you reasonably compare it to traditional Japanese cuisine, but I liked it very much. The food was excellent in every way, and there was enough innovative to keep me satisfied but not overwhelmed. I've been told some Nobu signature dishes like the miso cod and yellowtail with sesame oil are passe now, still they are new to me and I enjoyed them thoroughly. One does get the sense that you are eating at the outpost of a restaurant empire, everything is slick and organised, the food though was beyond reproach. One place I'd visit again if I can.
