I love using Wusthoff Classic style knives. My father was hooked on Sabatier (sp?) knives but I prefer the balance and feel of the Wusthoff Classic line. They have a full tang, which gives a nice balance and heft when using, and can be easily sharpened at home. Lately, I've been hooked on my Wusthoff Santoku knives - I have a medium and a large size and I find that I use them almost exclusively now. If I need to cut through something very heavy or hard I would use my very large cook's knife, but for nearly everything I can use the Santoku's and they're terrific. If you've not tried them, I highly recommend them.
