Many thanks for the report, it looks like it was an excellent meal. We'd always meant to visit this restaurant when we lived more towards the south but never got around to it.
I do enjoy a good menu degustation, particularly when each course is accompanied by the appropriate wine. We did a wonderful one near Dijon once with local produce - Charolais beef, snails, and, of course, the Burgundy wines.
It's nice to see things such as sweetbreads and pigeon on the menu. I get the feeling you don't see them as often as you used to, and I wonder if they're starting to vanish.
