Looking for recommendations in Taipei...

Hi everyone,
ThePuristS AP GTG to Taipei sounds like fun. I've never been to Taipei and was wondering if any fellow PuristS could recommend some places for great food. It doesn't have to be fancy.

I've heard about the night markets, is there a particular one that is better than others? Any type of foods (other than stinky tofu LOL) that I should try?
And the big question,... is Din Tai Fung at the original location really as good as they claim?
