Response to Michael Mina at the Bellagio Las Vegas
There is one of the courses that annoyed me. The beef course. One tiny slice of beef with a small piece of foie gras on it is not a "course". It is a cocktail type snack. I think that is too precious for words. Moreover, it is impossible to cook one slice of beef properly. I think this is the tyranny of tasting menus--unless they are brilliantly conceived they all too often degenerate into these little fussy paintings on a plate. Not food really but more of a teaser.
Just my opinion.
