The Hangi is the traditional Maori method of slow cooking using heated rocks buried in a pit oven and covered with earth. Perhaps not for the 'purist', but the 21st Century has caight up with the Hangi and this is a gas driven stainless steel outside version. Using hot rocks, however you still get the wonderful flavours trapped inside. Soft, tender and very tasty meats and vegetables ...
