Pepper shrimp (and other variations) - Golden Beach on Keelung Road and others
Ma La hot pot - Tai He Dian on Chung Hsia East road - but might be too hot that time of year
lamb stew at the night market down near the teachers college on the south side of Taipei
Beef stew and beef stew noodles at the road side aluminum siding tilt up on An Ho Road
yes, stinky tofu, but hard to find real, classic stinky tofu today
peanut sauce noodles at the road side stall just south east of Jen Ai and Chung Shan
And that's not including any of the new "high cuisine" and "nouvelle cuisine" palaces

Tuttobello for Chinese take on Italian
another less authentic but very nice Italian place near An Ho and Hsin Yi Road (I'll have to get this from a friend, I introduced them but it's been almost a decade)
