If you aren't going to any of the big races in June, try Parry Sound. It's a lot of fun and the community really gets involved. The Stratford Silvermasters will be there to start our season.

Cambridge - has the most teams out of the 3 you listed. But all local. No competition. 250m & 500m races
Stouffville - only about 20 teams last year. But there was some good competition for a first year event. Scotia, Royal Bank and Big Fish to name a few. 250m & 500m races
Mississauga - least amount of teams. mostly a local festival. race distance is short - 200m.
My crew will be doing the Stouffville race again this year. They did a pretty good job for their first year last year. The boats were 11 benches though - it was a little cramped. But I was told that they've modified the boats to all be 10 benches, so they now have proper spacing.

For a first year event it was well run. However the loading of the boats on the beach was a chore. Does anyone know if the Banks will be doing this event again this year? If so it will be an event with good competition.

We did last year, kinda liked loading up on the beach, plus it moved races a lot quicker, and it would have been even quicker if the line ups were better organized. site itself has got to be one of the three best in Ontario.
If Pickering isn't filling up like in the past are teams opting for Stoufville, or are events just starting to dwindle in size.

Our team is choosing to attend Pickering over Stouffville.
It was a pretty well-run first year event last year, but the date is too close to the Island. which means less time to fine-tune elements of the race before we have to compete again. As a bonus, you can usually count on decent competition at Pickering to make things interesting.
