Craig,
I have sent you an e-mail with a sketch of how I believe it would work best.
I would put an airline with 1 mm holes drilled in it or airstones to the left of the picture you posted so that the water gets as much contact time with the media before exiting through the transfer ports. Make the airline adjustable so you can tweak.
Below is a link to RS components where you can purchase 316 (food industry grade) stainless steel perforated sheet which i would cut to size and fix at a slight angle on the right of the chamber by the transfer ports. This would leave as much room as possible for the media.
The other job you may need to do is to fix some perspex on the inside to raise the walls as the turbulence would probably cause the media to overlap the sides.
