I just started rereading the books again (am currently just after the completion of the sorting in SS) and am keeping a list of interesting things from the book. Things that we already know by heart and have discussed before have not been making my list, but there is still some things in there that I've been catching. All page numbers given are from American editions.
1) Was that Professor Flitwick outside Vernon Dursley's office building the day after Voldemort was conquered for the first time? If so, what was he doing there? Did it have anything to do with checking out Dursley or was there something more to it? (Pg. 5 - SS).
2) Who is Aunt Petunia's friend Yvonne and will she play any part at all in a future book, as Aunt Marge (who was also mentioned) did? (Pg. 22 - SS)
3) Aunt Petunia says (after Harry suggests staying home for the day on Dudley's birthday) "and come back and find the house in ruins?". Is this forshadowing that sometime in the future the Dursley house will indeed be in ruins??? (pg. 23 - SS)
4) The description of Piers Polkiss says that he has a face like a rat. Is he any relation to Peter Petigrew or is it a mere coincidence? (pg. 23 - SS)
5) Quirrel tells Harry that he has to pick up a new book on vampires. JKR sure likes to through vampireish type clues around, doesn't she? (pg. 70 - SS)
6) Will ANY of these names ever appear again in the books: Agrippa, Ptolemy, Morgana, Hengist of Woodcraft, Alberic, Grunnion, Circe, Paracelsus, Merlin, the druidess Cliodna. These are all cards from chocolate frog boxes. (Of course we all know who Merlin is, but what about the others?). (Pgs. 102 - 103 - SS).
7) Seamus took a full minute to be sorted. Is this of any future importance? (Pg. 120 - SS)
8) With all of her smarts, why was Hermione placed in Gryffindor over Ravenclaw? (Reread the Hat's song to see what I mean). (Pg. 120 - SS). [I think that this question has already answered itself but still, I had to ask it].
As an interesting forshadow of a future chapter in the same book, Ron (at the sorting) says "I'll kill Fred, he was going on about wrestling a troll." (pg. 118 - SS).
As I keep reading through this book and others, I'll be taking down more notes and I'll post those here as well.

Wow, I just found out I'm a newbie... Well, in spite of that, I do know a lot about Harry Potter, i've read the books like a zillion times, and here's some stuff I've picked up.
You know the kranky barman in The Hog's Head? What if he's Dumbledore's brother Aberforth? The one who had some trouble concerning goats (see The goblet of fire lol). The bar smells like goats doesn't it? And Mundungus Fletcher, he owes Dumbledore for something, Sirius (I think it was him)said so in book five, and he is banned from The hog's head, Dumbledore's brother(?) bar, is there a connection?
And there is a ghost wih the last name Podmore in The Chamber of Secrets (You know, the headless hunt and all), remember Sturgis Podmore?
I have this theory Remus Lupin will be killed by Wormtail (I think the name suits him, so I call him that), because silver is fatal to werewolves. I read that somewhere anyway.
And what I'm gonna say now has probably been discussed a hundred times, but I'm going to say it anyway. That relevant thing in book two, Hagrid's excuse: 'Er...I was looking for some flesh-eating slug repellent!'? What was he really doing in Nocturn Alley?

Yeah, I was wondering about that too. In the movie, they make Hagrid seem so guilty. JKR said there is crucial info in the second about the later books-I think that part is it.

The comment Aunt Petunia made about the ruins if Harry stayed home on Dudley's birthday was probably just an expression. I don't really think it will come up in any of the books later on. Also, I forgot where I heard it, that someone will switch houses-for the first time ever! Although there are many candidates, this just goes to show that Hermione could be the one!

Sorry that I haven't been updating this here as I promised (I have on the other board, I just need to copy and paste). So, here are the new things I've added since that first list:
9) Quirrel has a lot of garlic, etc. in his room to ward off vampires. (Another vampire clue! and we all know that Snape was after him in that book too! Too bad that snape as a vampire theory was already discredited!!! It worked out SO WELL and I really liked it!!!) (pg. 134 - SS)
10) Harry thought that Marcus Flint looked as though he had troll blood in him. Will this come up again later? (pg. 185 - SS)
11) "[Harry] sometimes had the horrible feeling that Snape could read minds". Okay, so we already know the outcome of this foreshadowing, but it is still interesting to see that it was planted this far back in the series (just as somebody already mentioned in another thread how Voldemort was already in Harry's dreams in the first book when Harry had that dream that Quirrel's turban was talking to him and telling him to transfer into Slytherin house). (pg. 221 - SS)
12) "... Neville will play quidditch for England before Hagrid lets Dumbledore down." -Ron - pg. 264 SS
13) "A lot of the greatest wizards haven't got an ounce of logic." -Hermione - pg. 285 SS (An interesting comment, I think!)
14) "So useful to have [Snape] swooping around like an over grown bat." -Professor Quirrell - pg. 288 SS (Why oh why did JKR set up such a good case for Snape to be a vampire and then come out and say that he isn't??? Maybe he's an animagus??? A Vampire Bat Animagus!).
15) "... You're mother needn't have died..." -Voldemort - pg. 295 SS (Okay, so we already know this one but I felt like adding it anyway, just as a reminder to us all that he never intended to kill Lilly at all, just James and Harry.)
16) "... We'll be shopping for a vaction home in Majorca this time tomorrow." -Vernon Dursley. (Majorca is the very same place that Petunia's friend Yvonne was visiting when she was mentioned in SS. Just thought this was interesting). -pg. 7 COS
17) "... There are powers Dumbledore hasn't... powers no decent wizard..." -Dobby (Interesting quote. Which powers doesn't Dumbledore have?). pg. 17 COS
18) The Weasley twins think that it is a good idea to learn muggle tricks (such as picking a lock with a hairpin) even though they are a bit slow and most wizards find it a big waste of time. What other muggle tricks do they have up their sleeves that will come in handy later? -pg. 26 COS
19) The radio at the Weasley's home announces that witching hour with the popular singing sorceress Celestina Warbeck will soon be on. (just another new name from the wizarding world to keep in mind). -pg. 34 COS
20) "Mundungus Fletcher tried to hex me when I had my back turned." -Mr. Weasley. (Why would he do that??? Is he seceretly evil?). -pg. 38 COS
21) "Montlake was taken away for questioning about some extreamly odd ferrets." -Mr. Weasley (Who's Montlake? Yet another new wizarding name to remember!). -pg. 38 COS
22) All of Ron's comic book collection feature "The Adventures Of Martin Miggs, The Mad Muggle". (Nothing of importance here, I don't think, I just thought it was funny). -pg. 40 COS
23) Ron's ears went pink after Harry said that his house was the best he'd ever been to. Don't Dumbledore's ears go pink like that too? (More to add to the Dumbeldore is Ron theory which, although very well thought out, I don't think will happen. However, I thought I'd throw this in anyway). -Pg. 41 COS

29) Percy was reading a book called "Prefects Who Gained Power". What power will Percy get? Is HE the next MoM? Could be foreshadowing something there. -pg. 58 COS
30) "... [Percy's] got it all planned out, he wants to be Minister of Magic." -Ron -pg. 58 COS (AH HA! And we all know Ron's ability to predict the future without knowing that he's doing it!).
31) "... Slytherin, the house that turned out more dark witches and wizards than any other." -pg. 77 COS (Funny how it was changed in the book from every dark wizard who ever went bad was in Slytherin to now Slytherin has turned out more dark witches and wizards than any other house, implying that other houses really have produced dark witches and wizards).
32) "This wasn't the first time Snape had given Harry the impression of being able to read minds." -pg. 79 COS (Again, the clues had been appearing early on, hadn't they?).
33) "Fred and George must've flied that car five or six times..." -Ron -pg. 83 COS (Where did they go in the car, for what reason, and when?)
34) What was in Neville's package at breakfast the first morning back? -pg. 87 COS
35) What was Neville's howler from his gran about? (The one that he ignored that was horrible). -pg. 87 COS
36) Mrs. Weasley was really unfair to Ron when she told him in her howler that what happened was entirely his fault. Shouldn't Mr. Weasley have to take some of the blame for that too? After all, he's the one who did all that bewitching to the car in the first place!. -pg. 88 COS
37) Justin Finch-Fletchley's name was originally down for Eton. -pg. 94 COS
38) Colin Creevey's dad is a milkman. (lol!) -pg. 96 COS
39) "He [i]says[/i] he's done." -Ron about Lockhart's accomplishments. He once again has foreshadowed a reality. -pg. 103 COS

Most of the interesting things I found have already been listed but there are two thing I wonderind... In the SS hagrid say " yer mum an'dad were as good a witch an' wizard as I ever knew. Head boy an' girl at hogwarts..." SS p.55 And we find out in the 5th book James wasn't a prefect and I was wonder ing if it was common for a head boy to be prefects.
Hagrid also says "Theres not a single witch or wizard who went bad who wasn't in Slytherin." SS p.80 And at that time Sirius was consider the baddest wizard (after voldemort)and he was in Gryffendor wasn't he. Does anyone have any proof that James, Sirius, Lupin, and Peter were in Gryffendor?

Yup, JKR said they were all in Gryffindor. Hagrid was just exaggarating. I'm sure there were other evil wizards and witches that were in Gryffindor, Hufflepuff or Ravenclaw.
I have a response to 3 of your interesting tidbits:
3) I always had the impression that Petunia says this (about the house being in ruins if they left him alone there) because Harry's family's house did get blown up.
14) About Snape--Harry says in one of the books (I can't remember which one--I've reread 4 and 5 in the last few weeks, and I'm reading 3 aloud to my husband--and yes, he can read, I just like to read aloud) that Snape couldn't have gotten somewhere fast enough to do something unless he could turn into a bat or something (he was talking to Ron at the time, I think, but I guess that's a pretty safe bet).
24) Dumbledore tells Harry at the end of Book 5 that he's been watching him very closely, even more closely than he (Harry) knows.

40) "[Flint] had a look of trollish cunning on his face" -pg. 110 COS (another Flint is part troll hint).
41) Hagrid about Lockhart: "'If one word is true, I'll eat my kettle'" Even Hagrid foreshadowes Lockhart to be a fake! -pg. 115 COS
42) Hagrid mentions that Lockhart was the only man who applied, because DADA teachers haven't been lasting very long and people thought that the job may be jinxed. This would imply that Quirrell hadn't been around for long either, as well as the teachers before him. How long has this been going on for, who were the people before Quirrell, and what happened to them? -pg. 115 COS
43) More of a random thought here: Harry (for good reason) suspects that Hagrid's old wand pieces are hidden in his umbrella, and that Hagrid uses them. Why doesn't the ministry find out when Hagid does magic but they do find out when Harry uses it (or even someone near him, such as Dobby, yet they think that it's Harry anyway). -pg. 117 COS
44) Gladys Gudgeon and Veronica Smethley are on Lockhart's fan list. They probably won't appear again but still, the names should be kept in mind, just incase they do. -pg. 120 COS
45) Madam Z. Nettles of Topsham and Warlock D.J. Prod of Didsburg are Kwickspell users. More names to remember for future reference. -pg. 127 COS
46) On his 500th deathday party, Harry finds out that NHN died on October 31, 1492, which means that the second book takes place in 1992. -pg. 133 COS
47) Transmogrifian Torture - is there such a thing? Lockhart suggests that it is possible for that to have killed Mrs. Norris on Halloween. (Knowing Lockhart, I doubt that it is real. Any comments?) -pg. 141 COS
48) "[Dumbledore's] twinkling light-blue gaze made Harry feel as though he were being x-rayed." -pg. 144 COS (As I've only read book 5 once, I can't remember, does Dumbledore also possess the power to read minds?).
49) Not of importance, I don't think, but interesting: all of the initials of the Hogwarts founders are the same (not of eachother, but of themsleves. Godic Gryffindor (GG), Helga Hufflepuff (HH), Rowena Ravenclaw (RR), Salazar Slytherin (SS).
50) "You've only got to look at [Malfoy's] foul rat face to know it's him." -Ron -pg. 158 COS (Could Malfoy be another Pettigrew relative?)
51) Madam Pince is described as looking like an underfed vulture. -pg. 163 COS (Vulture anamagus? I doubt it, but that description, just interesting, is all).
52) Someone told Hermione that Flitwick was a dueling champion when he was young. Is this true, and if it is, will Flitwick become a bigger part later on with his dueling expertese? (sp?) -pg. 189 COS
53) "Wouldn't it be good if [Lockhart and Snape] finished eachother off?" -Ron (With his future telling abilities, perhaps Lockhart and Snape really will finish eachother off someday, and that it will be good?). -pg. 189 COS
54) "... Snape, gliding over like a large and malevolant bat..." (Even MORE Snape is a vampire evidence. Damn JKR for shooting that theory down. But I still stand by what I said before, maybe he is an animagus to become a vampire bat). -pg. 193 COS

68) The crowing of a rooster is fatal to the basilisk. (A bit of information which may have a small chance of coming into play later, maybe.) -pg. 290 COS
69) Olive Hornby used to tease Myrtle about her glasses. (A name to remember! All of the names we thought were nothing before have almost always come back to us. Maybe (though far fetched) this is one of them. She came back as a ghost because she was determined to haunt Olive for teasing her. lol). -pg. 299 COS
70) Riddle was in his 5th year 3 years before Gindelwald's defeat. (Just figured this out using math, and it was something that randomly occured to me so there is no page number to indicate here. I do find it amusing though that Grindelwald and Hitler were both defeated in the same year - 1945. Maybe Grindelwald had Hitler under the imperious curse to conquer both worlds. LOL).
71) Riddle says that he and Harry have a lot of similarities, even that they LOOK something alike. (Too bad JKR shot down the Star-Wars type theories of Professor Kibbles and Harry being related. Well, actually, not really, that would have kind of been a cheap ripoff. lol). -pg. 317 COS
72) Myrtle tells Harry that if he had died that he could have shared her toilet with her. (Harry + Myrtle in book 6, or maybe if he does die, Harry + Myrtle in the end of book 7! lol, jk. Myrtle obviously does like Harry though but I don't know as of yet what purpose that will play later). -pg. 326 COS
73) "...[Riddle] was probably the most brilliant student Hogwarts has ever seen." -Dumbledore. -pg. 329

Okay, Chamber of Secrets took me quite a while to finish. I wasn't reading every day and then I had to take nearly a full week away from it when I went on my camping trip so tonight I will get to start on POA!!! (Woohoo! My favriote one so far!).

Let's disect this now: the first thing about the ministry: maybe Harry really will get that auror job! unexpected gold: the tri-ward tournament winnings! He didn't lend Ron any but he gave all of it to the twins, who may or may not have lent some to Ron. We don't know. And then, unfortunately, we never know what Ron thinks for sure is the last thing in there, and I think Trelawney was just doing her normal "this student is going to die" thing like she does every year according to Professor McGonagall). -pg. 105-106 POA & 106-107 POA (Trelawney's thoughts).
