Response to The problem, Pete, is that I'm a numpty...

But it makes it easier to tell when you're getting close to needing a refill. One gauge reads the incoming pressure, and the other reads the output pressure. When the incoming pressure drops to a certain level (usually red on the gauge, but my tank barely reads out of the red zone even when full) you know it's time to get it filled. As far as I know, there's only one type of regulator that welding suppliers and beverage distributors carry for use with CO2, and that's the two-stage type. My dad was a mechanic and had all types of welders and gas torches and my stepdad worked on old-school dispensing-type vending machines (that's what my regulator came out of) and all I've ever seen hooked up to those types of cylinders are two-stage regulators. Just tell them you want a 20lb or smaller cylinder and a regulator for it like you were hooking up a beermeister or a kegerator but with a "quarter inch pipe thread" output and a output gauge that reads from 0 to about 60 psi, that's all they need to know. My regulator is a Norgren which is what my dad and stepdad both always used on their gas cylinders.
