It will just take some research and scratchbuilding...more or less depending on which racer you choose to model. Red Baron in particular was radically different from a standard P-51....it was not just a matter of the cut down canopy and counter-rotating props.

You didn't really ask this, but I think the 1/32 Hasegawa P-51D is a better starting point. These kits can be had cheap, and they come smooth surfaced with relatively little surface detail, which is how the racers look. It is not easy to see things like rivets on them....they are very smooth.

All the kits detail (with the possible exception of the wheel wells) is irrelevant anyway. The cockpit interiors of the racers, for example, have virtually nothing in common with a stockish P-51.
