Avoid the temptation to backbrush into the paint before it's dry. Let the first coat dry thoroughly before touching it again, then, as you stated, brush the next coat in the opposite direction.

Brush painting is such an art because there are so many factors involved, the first being the paint itself. There are not that many paints today that are real for good for brush painting straight from the tin as in times past, so you have to fiddle more to get something that works. And what works for one paint won't work for another; even different colors in the same brand will behave differently.

And there are some paints that are notoriously difficult to brush paint: Tamiya acrylics demand some fancy work, but it can be done.

Flow enhancer and retarder, as mentioned by Len and Dave, will really improve the brush-painting characteristics of Polly-Scale and other acrylics. They give you more working time and even out the finsih better.

And lightly wet sanding can get a smooth finish, though I think the real good brush painters can get a smooth finish without it.
