Other than getting a little complicated hardware wise, I think variable rear foils would be extrememly fun to have.
This applies mostly to the small rear sail geometry but for just outright performance, you would likely dial in maximum lift in lighter winds or in higher drag conditions where your boat speed is not as high.
In higher winds, you would trim the foils back.
Ive sailed a lot with fixed lift - angle of attack about 5.5 degrees with an asymetrical foil and Im not sure the adjustable foil would be faster (Ive had the fixed foils up over 70 mph and into the 60's more times than I can rememeber).
But... the thing that I think would be just a hoot would be to be screaming along at 50 mph and then adjust the lift to fly the windward runner and almost control the boat only by adjusting the foil rather than the sail sheet. It might be slightly slower but a controlled fast hike adds an extra dimension to speed and acceleration and I think would be just serious fun! Id bet you could even make a good portion of a jib with the runner flying.. Sailing would be more somewhere between sailing an ice boat and a glider!
I sailed the ice flyer for years without the foils and you could sail pretty much cross a lake in a hike. The foils make the boat faster and it will hike somewhat as you take off but with the foils, it comes down quickly as you build up speed. I like the speed better but miss the ability to sail long distances in a hike..
