Three questions for Ironman players

Been doing some duo ironman, and a few questions arose.

#1. For the warrior, how do you balance/compare +Dex vs Armor Class? For example, if you have a Cap AC 3 that is + 5 Dex, and then come upon a crown AC 12, which is the better item? Is there a way, in general, to compare the addition of Dexterity to Armor Class? Does every +1 to Dex equal about +4 to armor class, or is it useless to even try to figure it out. Input?

#2. Looking at blunts. A spiked club does 3-6, while a mace does 1-8 damage. Ok, so they each "average" out to 4.5 damage, so it shouldn't really matter, right? But what about at upper levels, when the creatures you fight pretty much don't HAVE that many life points. One whack with the s.club and they are dead, while you might "roll" the old 1 point damage with the mace. In this case (the Church levels), wouldn't it be better to use the spiked club? Then, in counterpoint, in the deeper levels (Catacombs) even the spiked club will not kill a creature in one hit, while the high end damage of the mace may "stun" or "knockback" an opponent. In these levels, wouldn't the mace be the better weapon then? Your opinion?

#3. Finally, I am playing with a partner who claims that blunts do 1.5 damage to all DEMONS, not just undead. He uses a warhammer on gargoyles and magma demons (and to great effect, I might add) and such in the lower levels. I always thought that after level 8 (the last time skeletons appear) using a blunt was not recommended. So, what is the story on blunts and demons, and on blunts in the lower (past level 8) floors?
