I've also had experiences with restaurants and it is very hard to get a monthly payment out of them on time. I like the idea of the menu book and charging the restaurants a flat yearly rate.
And you're right... the printers will get rich but you can easily negotiate these days because there is so much competition between printers. And.... everyone is not publishing a product everyday.
