I had a leather kit from
http://www.katzkin.com installed on my '99 Passat to replace the original cloth. It has worked out great for me. I've had it for almost a year now and honestly you could not tell it is not factory. I had a professional install it. Total cost was $999 + tax. The leather is very thick too.
The only problem would be to know how long before the Katzkin folks have a kit for the Pilot. The leather kits are made specifically for each vehicle. If you want to contact them a to find out don't forget to post your findings.
