Asif- I love Indian food and am on a quest to create a 'restaurant quality' taste to the Indian dishes I attempt to cook. I'm not a chef, and have not received any training from any elite cooking schools in India. I know i have no hope of matching the standards of any of the 'big time'Indian chefs, as they have received the training, and they have the talent!!!!! The best I can hope for is to create the taste I have experienced at Indian restaurants, who, in Indian eyes, are still not cooking authentic Indian food. The point is it tastes nice. I will always go to Indian restaurants, and try to find those serving authentic Indian food. Simply put i know i don't have the talent, so i will always go to Indian restaurants, even if the standard of my own cooking rises noticeably. I live in Brisbane Australia, and went to Sydney for a wedding. My friends and I went to an Indian restaurant in the suburb of Surry Hills. This place was definitely serving authentic food, as there were newspaper clippings pasted to the window, referring to this matter. It was certainly the best Indian food i have ever had, and you could tell it was different. Also there was a never ending stream of Indian families coming in to eat. Basic furniture, but low prices, and authentic food. Sharing some facts and secrets will not put any indian restaurants out of business. it takes considerable time and effort to prepare and cook, and most people do not have the energy to do this every week.
