The best(and easiest) way to secure identical data on two disks is to set them up as a RAID 1 array. Simultaneous writes take place so the data is always in sync. If one disc fails you can break the mirror and carry on using your machine as normal. When you get a new disk install it, recreate the mirror and it syncs with the existing disk.
Raid also has the advantage that it's hardware not software controlled.

Apparently the best discs for reliability at the moment are Samsung.
