ROOSTER CREEK

by

Gerri and DAJ, hope you enjoy the book. I just received your order in the mail today, DAJ, and I'll send it out on Monday. Thanks for the orders, everyone. I received a purchase order from a local bookstore for 20 books today. One-fifth of the total # of copies are already gone so I'm thrilled. Thank you for your support! For those Pike Countians who are looking for it...so far the book is only at Fill Zone on the four-lane at South Mayo Trail.

by D. Meade

I am sorry to say that I deleted the NE link from my website. The manager of the online paper is a very dear friend of mine, but I could not tolerate the idea that people from other areas and other countries would see some of the innane remarks that are placed there.

I'm glad someone else pointed it out to me.

My son is a jewel! He's single and working in Pikeville right now. He's in and out of school. I don't think he will ever get his degree. He was named for my Dad (Paul) and Carl's Dad (David). His name is Paul David. David will be 25 in Sept.

If you send your e-mail address, I will send you a pic of him. I went to postmypic and they stopped their service of posting on-line. Photopoint also went belly-up. I had pictures there and haven't set up another album on-line yet.

Has anyone heard about the condition of Charles Francis since the accident in which the man died around K-Mart? I know him and he is a very nice man. I hate to hear of this horrible thing happening. Does anyone know how the children are?

Also where was the man who died in the Sunday accident at Millard from? How are the other people who were involved?

Wonderful 4 chip fudge

by

I know you didn't ask me, but this one is delicious! I have an easy chocolate fudge too if you are interested.

Four-Chip Fudge

1 ½ teaspoons plus ¾ cup butter (no substitutes), divided
1 can (14 ounces) sweetened condensed milk
3 tablespoons milk
1 package (12 ounces) semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
1 package (10 ounces) peanut butter chips
1 cup butterscotch chips
1 jar (7 ounces) marshmallow crème
½ teaspoon almond extract
½ teaspoon vanilla extract
1 cup chopped walnuts

Line a 13-in x 9-in x 9-in pan with foil and grease the foil with 1-1/2 teaspoons of butter; set aside. In a large heavy saucepan, melt the remaining butter over low heat. Add the next five ingredients. Cook and stir constantly until smooth. Remove form the heat; stir in the butterscotch chips, marshmallow crème and extracts until well blended. Stir in nuts.
Spread into prepared pan. Refrigerate until set. Lift out of pan and remove foil; cut into squares. Store in the refrigerator. Yield: about 4 ½ pounds.

ULTIMATE CHOCOLATE CHIP COOKIES

3/4 c. Butter Flavor Crisco Shortening
1 1/4 c. firmly packed light brown sugar
3/4 c. peanut butter
2 Tbsp. milk
1 Tbsp. vanilla
1 egg
1 3/4 c. all-purpose flour
1 tsp. salt
3/4 tsp. baking soda
1 c. Hershey's Semi-Sweet Chocolate Chips
1 c. coarsely chopped pecans

Heat oven to 375 degrees.
Combine Crisco, brown sugar, milk and vanilla in a large bowl. Beat at medium speed of electric mixer until well blended. Beat egg and peanut butter into creamed mixture.

Combine flour, salt and baking soda. Mix into creamed mixture just until blended. Stir in chocolate chips and pecan pieces.
Drop rounded spoonfuls of dough 3 inches apart onto ungreased cookie sheet.
Bake one baking sheet at a time at 375 degrees for 8 to 10 minutes for chewy cookies (cookies will appear moist-do not overbake) or 11 to 13 minutes for crisp cookies. Cool 2 minutes on baking sheet. Place sheets of foil on countertop. Remove cookies to foil to cool completely.

Judge orders gag order.........

by Gerri

It looks like the student brawl at Shelby Valley High School last Monday has gotten a life of its own. Not only has it continued in this paper, but it has also made the national news system. I’ve had reports it’s been on CNN, Paul Harvey News and even CBS.
With all this coverage, District Judge Darrel Mullins has put a gag order for all to keep quiet about it. That makes our job a little harder, but we’ll get the news for you one way or another.

Note:
This is from the editorial in todays Appy-Express.

the way I see it, all were at fault.
If the ballgame was in progress, they all should have been in the gym.
If the ballgame was over, they all should have been in their cars on their way home.
