My understanding is that the Germans did not do this, or at least not normally. The stories I've heard about NCOs being selected to become officers all involve the NCO being sent back to an officer school, rather than being promoted right there on the battlefield.
If there was a vacancy the Germans normally would just have the next soldier down in the chain of command take over the position on a temporary basis, just until a replacement could be brought in to fill the vacancy. So if a leutnant platoon leader became a casualty his place would be taken by the senior squad leader in the platoon until a new leutnant could be brought in to fill the spot.
