National Peanut Butter Cookie Day
Here's a Peanut Butter Cookies Recipe
Ingredients:
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Directions:
Cream the butter for 2 minutes.
Add the sugars, cream for 2 more minutes.
Mix in the peanut butter and egg.
Mix together the dry ingredients - flour, baking soda, baking powder and salt.
Stir into the sugar butter mixture.
Wrap dough in plastic and refrigerate at least 3 hours.
Preheat oven to 375°F.
Shape dough into 1 1/4 inch balls.
Place about 3 inches apart on ungreased cookie sheet.
Flatten in crisscross pattern with a fork.
Bake until light brown, 9 to 10 minutes.
Cool on baking sheets for a minute; transfer to rack to cool completely.
Makes about 2 dozen cookies.
For chewier cookies, bake at 300°F for 15 minutes.

Love peanut butter cookies! I've been using the simplest recipe when I have a craving, and always have these 3 things on hand:
1 cup peanut butter
1 cup sugar
1 egg
Mix together sugar and egg, then add in peanut butter. Roll into one inch balls, flatten as desccribed above and bake at 350 for 10-12 mins. Easy peasy!
Seriously, it works! It's really a recipe for kids, because they can do all the work and just get help with the actual baking. They are pretty good to be so simple, and hold up perfectly when baking. Really nice for a last minute sweet or late night munch.
Heres another peanut butter cookie recipe. This one gets me freebies at Lush Santa Monica.
1 yellow cake mix
2 eggs
1/3 cup oil
3/4 crunchy peanut butter
Optional:
half bag of mini chocolate chips
sugar
Mix the first 3 until dough. Stir in peanut butter until throughly mixed in. Add mini choc. chips if desired. Make dough balls about 1 inch around. Roll in sugar. Make fork hash marks if desired (not necessary, I've done it without them). Bake in 350F oven 10-12 minutes without chocolate chips, 12-15 with them.
