Dinner tonight

Have I posted this recipe before? I'm making this chicken, I've added a few more veggies to the bottom of the pan and it's cooking now, making my house smell wonderful.

I make it almost ever week, make chicken broth with the carcass and use the leftover chicken to make another dinner.

This is the tastiest and easiest roast chicken ever, try it!

That's pretty much what I do for my chicken, except I stuff the breasts with seasonings also: Take a garlic clove and work it up under the skin of each upper breast/shoulder area so that the chicken resembles a linebacker with shoulder pads. Then I'll rub a seasoning/pepper/herb mixture under the skin on each breast. Also season the skin with a mixture of worcestershire and hotsauce, and additional herbs.

No kidding on the "no leftovers". Just last night, SO-BOO pulled out this huge thing of parsley and he said "What's this?" I said "A shitload of parsley" and he said "well, can't you just freeze it or something?" and I said "Kinda defeats the purpose of 'fresh herbs', wouldn't you say?"

Plus, it's like a buck fiddy.

I made linguini with clam sauce last night. Put some fresh parsley in there. I love it.

Yet, I don't like cilantro really. Weird.
