CURRIED FISH

2 teaspoons of oil

small piece of fresh ginger, chopped

1 large onion, thinly sliced

2 whole cloves garlic

1 1/2 teaspoons ground chili powder or fresh ground chilis

1 can coconut cream

2 teaspoons curry (or more if you like it stronger!)

1 cup cubed pineapple

1 tomato, sliced in wedges

1 lb fish fillets of your choice, or you can use prawns, scallops, or other seafoods. Hey, this is your dish, put what you want in it!!!

1). Heat the oil in a skillet and add the ginger, onion, garlic, and ground chili.

2). Fry for about 5 minutes or until onions are slightly browned.

3). Add 1/2 cup coconut milk and bring to a slight boil. Don't forget to stir occasionally!

4). Add curry powder. Cook over low heat for 10 minutes.

5). Stir in remaining coconut milk, and bring to a slight boil.

6). Add pineapple cubes and tomato.

7). Cut fish into serving pieces and add to the mix. This could also be prawns, scallops, etc. Simmer for 10-15 minutes.

8). Serve over white or brown rice.

CHICKEN AND GREENS IN COCONUT MILK
2 1/2 lbs chicken cut into serving pieces

2 teaspoons oil

1 1/2 cups coconut cream

1 1/2 lbs greens (spinach, bok choy, watercress, etc. or a little bit of each!!!)

1 meduim sized squash

2 cloves garlic, crushed

1 small piece ginger, finely chopped

1). Remove the skin from the chicken and lightly brown in the oil with 1 clove of the garlic.

2). Add 1/2 cup or so of the coconut cream and the remaining garlic. Simmer for about 10 minutes.

3). Skin and cut the squash into cubes. Add to chicken. Simmer for about 5 more minutes.

4). Add the greens and let simmer for about 15 more minutes.

5). Serve over rice

COCONUT RICE
2 cups rice

2 cups coconut cream

1 1/2 cups water

Add rice and water. Heat to a boil. Let it low boil for about 5 minutes being careful not to let the liquid boil over. Put top on pot, remove from heat, let sit without stirring for 10-15 minutes. EAT IT!!!

There are a few variations on this that can make really nice side dishes. Add crushed garlic, finely chopped ginger, curry, mixed with mashed squash, cut some green onions or chives and place on top when cooked, or anything else you can think of, or add all that stuff.

Boil rice with any kain sauce pan make sure em gat lid.(yu save mipla nogat kain samtin olsem rice cooker). Make sure yu keep an eye on the rice so it doen't burn at the bottom. Once you have followed this process you will no dought be confronted with the heartiest meal fit for a king or should I say Chief!

Note: This recipie can also be made using Tinned fish. Same style just follow steps above. I also believe that a side serving of kumu goes great with the above recipie. And for desert sampla buai topped off with a stick of mutrus. Catch!!!

We need to get off this corned beef tinned fish stuff. They're imported junk fish and junk meat. Buying that food helps destroy our kina, it don't matter if their canned in PNG everything else about them is foreign. To think that we have all the wonderful truly PNG food possibilities and yet you concentrate on this crap that the colonial mastas brought in. Our indigenous food is far higher quality then tinned fish and corned beef, much less the health concerns of fatty meats.........
