JEMIMA was the original character name - seen in the video as well as being in the UK version of the show.

SILLABUB is the Broadway (and almost all other productions) version. One known reason for the name change was the sensitivity or "being politically correct" - namely, the name "Jemima" was reminiscent of "Aunt Jemima." The character on the pancake syrup bottle was a charactature of the old "Black Mammy" that graced many stereotypical movies and books of the "Old South." Rather than seem "offensive," the character's name was changed to another favorite of T.S. Eliot's - Sillabub... According to his second wife, Valerie, this name was a mixture of "Silly" and "Beezlebub" - maybe a way to describe her as being "devilishly silly?"

Essentially - they are the same character. I have noticed that lately, the US Tour version (Sillabub) looks very much like the UK Tour version (JEMIMA).
