RECEPIE IN CAPITAL LETTERS I noticed that there are alot of purplish spots on the street and sidewalk under the trees today. Can it be? I eagerly check and find purplish black berries lying amidst the spots. YES :^{p THE MULBERIES ARE RIPE AND FALLING. I'm overjoyed. I remember a Mulberry Workshop I had. We ended up with a whole meal and everything was made with Mulberrys.
TO COLLECT THEM ~ I get some narrow necked Kool Ade containers because if they fall over they don't spill many berries, and they hold about 3 Cups of Mulberries each. I then got an old sheet or two remembering Mulberries stain ~ to put under the branches before I shake them to catch the falling Mulberries. Yes ~ I do pick up alot of Mulberries from the ground and search on and through the grass for them.
NEVER collect Mulberies that do not fall when tapped if on the tree.
REMEMBER ~ Put all the collected Mulberrys in a small bowl to CHECK THEM carefully before use so only Mulberries go into your recepie not grass, leaves, twigs, dirt and other stuff. The stems are left on the Mulberrys as they are O.K. I especially like collecting Mulberries after a storm. I put some weighted sheets down before the storm to collect the Mulberries that fall during it and I also feel that the energy of the storm is added to the Mulberrys. Now that I have coilected the Mulberrys it is time to cook with them. Then MMMMmmmm
MOUTHFUL MULBERRY MUFFINS
3 CUPS MULBERRYS
3 CUPS FLOUR
2 CUPS SUGAR
1 CUP OR 12 OZ CAN EVAPORATED MILK
2 LARGE EGGS
8 TBSP. MARGARINE OR BUTTER ~ 1 STICK
2 TSP. BAKING POWER
1 TSP. VANILLA
IN A BOWL MIX TOGETHER ~ 2 CUPS FLOUR, 2 CUPS SUGAR, AND 2 TSP.BAkING POWDER. PUT ASIDE 1 CUP for use in the future time.
ADD STIRRING CLOCKWISE 2 LARGE EGGS, ONE 12 OUNCE CAN OF EVAPORATED MILK AND 1 TSP. VANILLA FLAVORING.
SLICE MARGARINE ~ BUTTER STICK INTO SMALL SECTIONS. STIR IN 6 TBSP. OF THE SLICED SOFT MARGARINE OR BUTTER. BEAT IT ALL UP REAL GENTLY UNTIL IT IS REALLY SMOOTH. A_haaah! Smoootthhh..
GENTLY MIX IN BY LIFTING AND STIRRING (Would that count as exercising your hands with your food?) 3 CUPS OF MULBERIES IN 1/2 CUP AMOUNTS.
ADD 2 TBSP. OF MARGARINE OR BUTTER AND 1 CUP OF the FLOUR you set aside for use in the future. The future is now.... TO EVERYTHING AND MIX IT UP REALLY WELL. Don't try to get too confused in the process.
LET THE MUFFIN MIXTURE SET and meditate COVERED ABIT on the meaning of being a muffin.
PREHEAT THE OVEN TO 350 DEGREES.
USING 1 FULL CAP FROM YOUR OIL CONTAINER ~ 1 TABLESPOON FOR THEM ALL ~ OIL (I use Peanut Oil because it is so nutty) EACH CUP IN THE MUFFIN TIN. MIX UP THE MUFFIN MIXTURE REAL GOOD AND FILL EACH MUFFIN CUP TO THE TOP. If any mixture is still left behind by the first batch depending on the size of your muffin tin cups make a second batch. I made 2 batches one batch at a time.
PUT THE MUFFIN TIN IN THE OVEN AT 350 DEGREES FOR 25 MINUTES. THEN CHECK THE MUFFINS AND SHUT OFF THE OVEN. LEAVE THE MUFFINS IN THE OVEN FOR 8 (4 X 2) MORE MINUTES.
REMOVE, AND LET COOL ABIT. Serve with Butter, Butter and Cinnamon, Apple Butter, Honey or anything else you feel like putting on them. Have a mouthful of Mulberry Muffins.
