Hoopilicious Pineapple Pie

What can you do with Canned Chunk or Sliced Pineapple ?

Try a Hoopilicious Pineapple Pie.

FOR THE CRUST ~
In a Bowl put 4 Cups Flour and 1 teaspoon or 2 Dashes of Salt. Remove 1.3 of it and put aside. Add 1/3 Cup Peanut Oil to the Flour / Salt mix in the bowl and mix it up real good.
Return the Flour you removed and add 1/2 Cup Water stirring it up. Mix everything up real good but don't get confused.
Useing the Cap from the container of Peanut Oil to measure it oil a Pie Pan with 1 cap Peanut Oil. Like finger painting cover the Pie Pan and it's edges with the Peanut Oil. Rub hands together. He He
Take Chunks of the Dough and press it into the sides of the Pie Pan pressing and walking it arround the sides, down and across the bottom. Press the dough on the edges flat and up on the sides. Put Pie Crust aside abit to look into itself..
In a small pan melt 1 Cup of Butter, cover and put aside for later Put a Pastry Bush next to it.

THE PIE FILLING ~
Take 2 ~ 20 oz. / 1 lb. 4 oz / 566g - Cans of Pine Apple Chunks - with Heavy Syrup ~ Preferred or 2 Cans Pineapple Sections. NOTE - If using Crushed Pineapple (I bought a can of Crushed Pineapple by mistake) use 1 Can and 1 Can Pineapple Chunks. Pour off all the syrup/juice into a measureing cup. If useing Canned Pineapple Slices after draining the Pineapple slice up the Pineapple rings from the center out in the can to pie size places.
2 Cans Make 4 Cups of Pineapple Chunks.

Put the Pineapple Chunks into A MIXING BOWL.
Happily stir 1/2 cup Sugar into the Pineapple Chunks in the Bowl. Stir in 1 Cup Pineapple Syrup that you poured off the canned Pineapple. Heavy Syrup works better then Pineapple Juice, and then Mix in 4 Tablespoons Flour.
Stirring Clockwise for Positive Energy Add 1 Teaspoon Nutmeg, 1 Teaspoon grd. Cinnemon, and 2 Dashes of Salt.
Mix everything up real good and pour it all into a 2 Quart pan/pot.
Put 4 Tablespoons Butter on top of the Pineapple Mixture.
Bring it to a boil stirring everything clockwise and then simmer. Stir it until it is thick and the liquid drops off the spoon in a sheet not being a drip. Let the mix set a little bit to relax.
Preheat the Oven to 450 degrees.

Flour table with a handfull of flour rubbing it all over the place used for the top crust. Roll out the top Pie Crust till it is 1 inch bigger then the Pie Pan. Make sure it is not too thick.
Spooning pour the Pineapple mixture into the Pie Crust in the Pie Pan.
Slice a corner of the crust on the floured table about 1 inch wide and lifting it on a long knife slide it over the Pineapple mixture in the Pie Shell on 1 corner ~ well it is not a corner because it is round but you knows what I mean. Cut another 1 inch section and slide it over the Pineapple Filling next to the first crust covering. Continue doing this like doing a Jig Saw Puzzle until the Top of the Pie is totally covered. If any openings are visible sprinkle dough over them. Do not press down so steam can escape making opening if neccesary.
When fully covered by it's blanket of crust push the sides down and up creaseing the edges.
Put it in the 450 Degree Pre-Heated Oven for 15 Minutes. Then remove the Pie partially by pulling out the shelf it is on part way. Useing the Butter Brush Spread the Butter along the edge sides and all over the top so no open space is left behind.
When totally Covered with Butter push the Pineapple Pie back into the oven and leave it 15 Minutes longer. When done the crust should be Golden and dry.
Remove and put the Pie aside to cool down and relax. You may move it from time to time as it heats what it is on.
When it's cool ~ Your Pun here ~ put the Pineapple Pie in the refrigerator until it is ready to serve. Serve Cool.

This sounds very good. My mom made a double crust pineapple pie that was a family favorite. Unfortunately, she never wrote down the recipe....a yummy piece of family history was lost.

Ham and pineapple is my favorite kind of pizza.
