BLACK EYE PEAS FOR LUCK

Black Eyed Peas are eaten for luck and to ensurare a healthy and prosperous New Year. There is even a Luck brand of Black Eyed Preas. Black Eyed Peas are a Bean with a single Black spot or eye in the inside center of each one hence the name Black Eye Pea though it is actualy a bean and not a Pea. Thus they can be used to get rid of evil demons, and negativity. Beans are used / considered by Japanese people to drive away Evil Spirits by and protecrt them from evil energy by throwing beans at the Oni and Demons. Later other unused beans are eaten to get rid of negative energys within the body by eating beans. Do not eat the Beans you throw at the Demons and to Drive Away Evil Energy. It ¦s like the western tradition of throwing salt over your shoulder because it will enter into the eye of the devil who tempts you over your left sholder and hurt him. Since Black Eye Peas are beans they would drive away demons and negative energy like beans. After throwing the beans / black eyed peas at the demons you can have a bowl of beans to eat to purify yourself. Do NOT eat the ones you throw at demons saying ~ Deamons go away, Happiness come and stay. As you eat the beans remember they not bonly drive away evil energy and demons, burt provide a healthy and prosperous New Year.
One year when I was knee high to a Grasshopper we went to the Rio Grande Valley of Texas for Christmas and a big storm in the Pan Handle stranded us there. That New Years we went to a Bishop's Cafeteria and were surprised that they were giving a bowl of Black Eyed Peas to every one even people who did not buy anything. They told us they gave Black Eyed Peas to everyone to bring Health and Prosperity during the coming year. I was impressed that a Cafeteria gave Black Eye Peas away, and so felt there must be something to it. Ever since then I have eaten Black Eyed Peas on New Years day for a Healthy and Prosperous New Year. Have a Big Bowl ~

Black Eyed Peas Casserole
Combine together 3 ~ 13 oz. Cans cooked Black Eyed Peas and 1/2 Cup (2 packets) instant Grits uncooked for Peas and Hamoney .... I mean Peace And Harmony stirring clockwise to add Positive Energy.
Add 2 Cup cooked Jasmine Rice to the Peas and Hominey mixture.
Stir in 1 Tsp. of Salt to drive away the Negative Energy. Hmm wonder if I should add Sage for Purification.
Preheat The Oven to 350 Degrees.
Mix everything together and put in a large rectangular glass Casserole dish or similar.Spread Fried Onion Rings across the top of the Casserole for all the fast foods you may eat during the year. Well I like Kid's Club meals* and put the Onion Rings on my HamBurger.
Spread 2 ~ 8 oz. / 226 g packages of your favorite Shreaded Cheese over the top of the mixture.
Bake at 350 degrees for 30 minutes.

BLACK EYED BURITTO

In a pot BRING TO BOIL A 15 0z. /425 g. I Use a 15 oz. (425 grm) Can of LUCK"S BLACK EYED PEAS for Luck).
When soft with a Mortar press and smoosh the cooked Black Eye Peas. Let set a bit.
In A Seperate Pan Heat 1 Cup of Cooked Rice. TO COOK RICE put 1/4 cup Canola Oil in a pan / pot. In 1 Cup Water / H20 ~ BoiL 1 Cup Rice until tender.
Stir Rice into the container with Smushed Black Eyed Peas until really mixed up but don't get too confused.
Spread some of the mixture in the Middle of a Burrito ahh Tortillo Shell.
Sprinkle a handful of Shreaded Cheese
(I like Bistro with Jalpeno Peppers) over the Bean~Rice mixture.
Tomatoes and shreaded Lettice on it are optional.
Roll Tortilla Shell Around The Mixture and then Fold The Bottom of Burrito Shell up and Top down.
Cradle it in your hands. Bite it and enjoy it.

I usually cook them but this year I didn't. The boss is sick and is not eating anything but chicken soup. I guess I could have tossed in a few peas, he wouldn't have noticed...

We had our usual corned beef and cabbage.
Right now I am wishing we hadn't....lol.

Hope the boss gets to feeling better soon.
That's not a very happy way to bring in the New Year.
