He did have undead slaying abilities, but, duel classed cleric thieves are stuck with blunt weapons. (Does use any item in BG2 correct this? )
Not AFAIK. The closest thing to an edged blunt you might find is a Staff-Spear. There are always Slings for non-"blunt" though. Heh.
Thrown potions, like oils of fiery burning could replace holy water.
There actually is some Holy Water in BG2, but it's mostly quest-related.
Time stop is a little tricky. I don't think there is a way most Paladins could cast time stop. Boo hiss. Turn undead is much like the holy cross, burning all undead baddies in a painful fit.
If it's important for the Pally to have Time Stop, not sure you can do much there. Thieves in ToB can get a Time Stop trap though. Traps must be set while no enemies are on screen.
Maces are nice, but, not allowed. Flails only.
Aww. Out goes that spiffy "Mace of Disruption +1" that kills undead in a snap.
