Sound mixing is taking sounds and blending them with other sounds thus creating new sounds.

Sound editing is the technique of going through an audio track and adding and deleting sounds (effects, dialogue, etc.)

I would imagine that Dante, MeSoBossy, or Smirk would have a more in-depth explanation of the difference between the two, but that's my definition of the terms.

Short answer, mixing is the creation of sound, editing is the implementation of sound.
