My cat will love one kind of food then refuse to eat it after a while. My cat sneaks up on me at night. My cat falls down the stairs sometimes. My cat scratches and bites me when I try to pick her up.
My parents have a cat who hated everyone in his younger days (he's 10 now and he still does to a certain extent). He used to chase little kids down the street if they got too close to the yard. His name is Shadow, but oftentimes he is called Slash.
Nah, your cat sounds fairly normal. I mean, "liking one kind of food then not liking it...." I used to go through phases where I'd eat the same thing for dinner for months....and then one day, suddenly realize I was sick to death of it, and almost never eat it again (salad with tuna fish and thousand island dressing comes to mind).
Not all cats like to be picked up- usually the ones that do have been handled as kittens. If somebody came up being YOU and swooped you up in their arms etc., it might make you a little ornery too!
My cat doesn't attack me at night, but sometimes her face is RIGHT THERE when I open my eyes. If I so much as scratch my ass while lying on the couch, she will attack my moving hand from across the room.
So save your $$$ on pet therapy and spend it instead on a nice, tall, deluxe kitty tree!
I think that if your cat is a picky eater it's a sign that you pamper it too much. I'm poor, I buy whatever cat food is cheapest and my cat can sure as hell eat what he's given because he's not getting anything else. This seems to keep promlems like yours from ever arising.
As far as attacking you at night, that sounds pretty vague. Do you mean like clawing your face, or jumping on your leg if it moves? If it's the latter, your cat is probably just bored and needs some kind of toy.
I would agree, that you might be pampering the cat too much. My cats and I lived with a roommate for awhile. She had a cat as well (a pure breed, and she did Cat Shows-scariest freakin people in the world cat show people. Oh and in case you didn't know, and if you didn't my roommate would be sure to tell you quickly, my cats were deemed "pet quality", not to be confused with her pures.... okay deep breath Kath...she is gone...it has been years...let it go....) Anyway, she would bring home hundreds of packets of free premium catfood samples from these shows.
So along with her cat my cats would get this buffet of food all the "best" stuff night after night the food changing alot. And after a short while my cats all of a sudden didn't want anything they became really really finicky. And it was a bit scary because they just wouldn't eat. So I asked her to feed her cat in her room and I went out and bought their previously favorite cheap stuff Whiskas. Put it out for them, made sure they got no treats and after a couple of days of worry they started eating it again and I have never changed them from it since. If I want to give them a treat I might put out a small plate of the fancy wet food in addition to their regular dry, but never instead of.

Lots of cats do this. They're picky about food. They attack stuff. They're crabby. Had you not heard about this before you got a pet? Had you not read a single Garfield comic strip? Before every cat lover emails me with hate letters, obviously not all cats are like this. Especially not the cats who belong to all the people who want to send hate letters...they're the best!
You can go to great lengths to do things that might possibly adjust your cat's behavior slightly...but chances are you'll just end up angry and bitter for spending all the time and money to end up with the exact same cat. It's a cat's prerogative to be an absolute bitchy evil ice queen and still get any kind of food it wants while you sit on the floor to watch TV because your cat decided she wanted the recliner. You gotta admire that.
