I am curently living in the US on a H1B visa and have began the process of applying for a green card through my employer in January. Currently I am waiting to gain labor certifcation.

Can I leave the US to get married in the UK and return to the US under my current H1B visa. Or do I have to adjust my visa status to that of a spouse to re-enter the US?

An H-1B visa is a dual intent visa, meaning that you can still maintain H-1B status even if you plan to pursue permanent residency (either through your job or marriage to a US citizen).

You can travel with your H-1B visa and then apply for residency through your local USCIS office once back in the US.
