. She combines her lavender elixir with chamomile and rose, so if you have any of the three dried herbs, you could make the elixir now, rather than waiting until the summer.
What I've found with making herbal honeys last year is that they go very thin and are not as sweet as the actual honey, so if you're using them for sweetening purposes, you need quite a bit more honey or add some ordinary honey as well. I made dog rose, "burns honey - evening primrose, bergamot and rose", wild bergamot, horseradish and elderberry. The latter must be kept in the fridge or it goes mouldy. They are quite amazing. I may try a sage honey to put with sage vinegar if I can harvest my aunt's sage bushes again this year.
