There are at least two.St. Gertrude, who is also the patron saint of cats and St.Ponc.In this post, with all due respect to St.Gertrude I shall concentrate on St.Ponc[there is a cedula under the c making an "s" sound] for 3 reasons:-
1.His feast day is 11th May,just around the corner.
2.He is also the patron saint of beekeepers.
3.His feast day is celebrated in Barcelona and a number of towns in Catalonia by holding fairs where medicinal herbs, herbal remedies are sold together with honey and jams and preserves made with honey.

Rather than providing links may I suggest a Google search with key words Saint/Sant Ponce for numerous article and a Wikipedia entry. Some are in Spanish but there is a translation function.

Let us hope St.Ponc and indeed St.Gertrude as well, remember the plight of British and Irish herbalists.

Kevin
