having worked in restrunats for many years this is what they do.
First off do not cut the lettus with a knife. Break it by hand. Something in the knife mucks up the lettus.

The restrunats usually break up a ton of lettus at a time and put it into a big trash can container with tons of water and then add a preseritive to it.

but the lettus usually does not stay around for more than 3 days.

What I have done is when I bring the lettus home I DO NOT WASH IT. I leave it in the wrapper it is in and open it carefully each time I need lettus. I peal off the leafs one at a time in order of where they are on the head. Then I rewrap the head and put it back into the bottom chill box of the frig.

Then I wash each leaf I removed and then break it up.

some how the outer leaves keep the inner ones a bit fresher and chrisper.

I think the key to keeping it fresh is not to put it into a container that does not have holes. i think the moisture in a bag or close bowl will cause the lettus to wilt. This is just my observation... BTW how can you afford lettus at the pressent prices. ???? LOL I would not buy lettus (besides the guys won't eat it) Toulouse had a store that would give her all the old lettus
for nothing. So did Ms Ubbergoose. I sure would go that way if I could.

Then what you do is use a whole head at a time and chop it up to be used that day for the ducks (you can use a knife if you are going to use it all in one day).
